1. Black Rice Dosa
How to Prepare Batter
Soak the black rice with little water for an hour and grind into a smooth paste. Add water to get the desired consistency. Or Add water to rice flour. This is instant batter.
Black rice - 1 cup
Urad Dal - half cup
Cashew nuts – 5-10 (optional)
Salt to taste
Fenugreek Seeds - 1/4 teaspoon and or flax seeds ¼ tsp
Oil for cooking Dosa - 1 teaspoon
Method : Wash and soak Rice, Fenugreek seeds, Urad dal for 2-3 hrs. Grind it with required water to smooth batter. Add Salt and mix well. Let it ferment, for 5 hours or overnight. Add salt to taste and make dosa or pancakes. Optional : Soak cashew nuts for an hour. Grind and add to batter. Optional: Add 1 tbs soaked rice poha / flakes and 1tbs crushed and ground boiled black rice mix into the batter just before cooking.
Making dosa batter or pancake batter
Add both the rice flour and urad dal flour into mixing bowl. Pour water and mix well the batter has to be smooth and without any lumps and evenly mixed the consistency should be that of a thick batter but still flowing. Allow fermenting for 4hours or more.
Mixed Vegetables - 1 cup
Coriander leaves - 3 tablespoon (finely chopped)
Onion - 1 (finely chopped)
Method: Clean and chop Vegetables. Cook it with required salt. Add it to the batter. Add a teaspoon of oil add chopped onion and fry till brown in color. Mix fried onion with Fermented batter. Mix well. Add coriander leaves and mix well. Heat a flat pan and Pour ladle full of batter spread it. Sprinkle oil around it. Let it cook. Turn it over and cook. Once done take it out.
