Dals, Vadas, Poori, Pongals, Pakodis, Curries, Kadhi, Kanji, Ladoo & other Sweet Dishes. Dosas, Pancakes, Idlis, Cheelas. Used in Dal Makhni & Dal Bati.Traditional Daily Dal
Wash Dal 2-3 times & Soak for 10 mins to 1/2 hour or Cook as soon as washed. If Soaked , Cook in same water. Add Salt to taste & Turmeric Powder. Pressure Cook to one whistle or Slow Cook in Clay High Fired Pot/Steel etc.
Seasoning /Tadka /Chownk - To Cook Dal, add this Seasoning. Take 1 tsp/tbsp Ghee/Oil in a Small Iron Bowl. Lightly fry 1tsp Cumin, Pinch of Asafoetida & take off Heat. Now add 1 tsp Coriander Powder (optional), 1/2 tsp Garam Masala, 1/2 tsp Red Chilli Powder. Immediately add Hot Tadka to Dal.
To Serve, Garnish with Fresh Green Coriander Leaves. Serve with Chapati/Rice.
Recipe: Urad Dal Ladoo
Ingredients – 1 cup Urad dal, 1 Cup Taru Khandsari/Jaggery, Cardamom (to taste), ½ cup Taru Desi Ghee
Method - Dry Roast Urad Dal till Aromatic. Grind into Powder. Roast lightly in the Ghee for a few minutes, stirring all the time. Add Khandsari/Jaggery & Cardamom Powder. Combine into Ladoos.Rich in proteins, carbohydrates and Vitamin B. Contains high quantities of iron, folic acid, fibre, magnesium and potassium. Improves bone health and digestion. Diabetic-friendly. Maintains cholesterol and improves blood circulation, heart healthy. Strengthens the nervous system and reduces pain and inflammation. Improves skin and hair health.
Once packet is opened, store in glass jar or air tight plastic jar. Consume quickly or Refrigerate. Residue-free produce catches weevils easily. Composting produce is the best option if spoiled.
