Boil 2 cups of water and add 1 cup amaranth. Mix well. Let simmer for 20 minutes. When cooked, season with sea salt and freshly ground pepper. Keep aside. Heat ½ tbsp oil and sauté all the vegetables (to taste) on medium flame for 5 mins. Add ½ cup mashed potato, salt and spices (chilli powder, amchur, coriander powder, lemon zest). Mix well. Cool. Make small patties and coat both sides of patties using amaranth flour. Pan fry them using 2 tbsp of oil till golden brown. Serve hot.Gluten Free. Rich in Proteins, Calcium, Minerals & Vitamin
