BLACK RICE SALAD
Easy to cook. Not necessary to soak longtime. Water and cooking time required is similar to white rice. Cooked black rice is soft, palatable with a nutty taste. It can be eaten like regular rice with dal, curd, as a sweet, porridge, pancakes, (cheela, Dosa) & noodles.
Black Rice Salad:
Boil 1 cup black rice in 2-3 cups water.
Chop cucumber, tomatoes, onions, coriander, celery , grated carrot, ginger, haldi. 1tbs. roasted mix seeds eg. flaxseeds, melon seeds, sesame seeds. Lemon and rock salt to taste. 1tbs mix mustard seeds, jeera, crushed peppers, and curry leaves.
Roast in olive oil or ghee.
Serve without heating.
